What Are The Laws On Using Quotes/ References To Anime/movies/etc.?

Im in the process of writing a handbook and I needed to know what can I and can't include. For example: I wanted to include a list of all the Ninjutsu from Naruto (A popular anime series) for a reference guide page. My solution, thus far, is including a page in the page where I list all the Anime/Manga referenced, and not claim it for my own. I am also taking cosplay pictures with friends to include as examples on how to perform certain moves, and will probably edit out any symbols/emblems
